Work quickly and deliberately, folding for 2-3 minutes until the vinegar is fully incorporated and the rice becomes glossy.
Cool the rice to room temperature before using it for sushi. This typically takes 10-15 minutes. You can speed this process by fanning the rice with a handheld fan or newspaper while folding—this is traditional practice that also helps develop the correct texture. Never refrigerate sushi rice, as cold temperatures harden the rice and compromise its texture and flavor.
